Here, Chef Julie demonstrates the making of Salmon Fumet. Fifi believes that for a good salmon dish requiring a stock reduction, it is best to use a fumet of the proper flavor. For that reason, for salmon dishes, he prepares a fumet made with half salmon, and half white fish, along with wine, vegetables, and very light seasoning. Of course, this fumet cannot be used with any other fish. It is this attention to detail that makes Fifi's Kitchen special.
