Making Salmon Fumet

Here, Chef Julie demonstrates the making of Salmon Fumet. Fifi believes that for a good salmon dish requiring a stock reduction, it is best to use a fumet of the proper flavor. For that reason, for salmon dishes, he prepares a fumet made with half salmon, and half white fish, along with wine, vegetables, and very light seasoning.
