This variation on the traditional Bûche de Nöel is for lovers of chocolate and praline. Inside, the log is a roulade of cocoa genoise (flavored with amaretto) and a chocolate/praline/amaretto cream. The outside is simply ganache (and lots of it), and the mushrooms, meringue, bittersweet chocolate, and cocoa.
