The Chocolate Ginger Volcano is a Fifi's Kitchen original. At the base is cocoa genoise flavored with ginger liqueur, and spread with a layor of ginger preserves. The cone consists of a similarly flavored cocoa genoise, but is filled with a white chocolate/lemon/candied ginger mousse. The entire cake is covered with sculpted whipped ganache and covered with more candied ginger. Finally, this foot-high geologic monolith has poured over it an orange-tinted white chocolate cream.
